Project:New chemical indicators to assess wine microbiological quality
Project summary: The present routine chemical indicators of wine quality are known for a long time. Volatile acidity is the single indicator of microbial activity. It is mostly produced by acetic acid bacteria, but other microbes may be relevant producers. In addition, grape fungi are known to deteriorate wine quality but the determination of the several types of rot is not suitable for small or medium wineries. Therefore, this study is aimed at the implementation of new analytical techniques to assess wine quality at winery level.
